What's for dinner tonight...

If you have zucchini in your garden, you know that the can grow from 4" one day to10" the next day.  I make zucchini bread and freeze, it does freeze well, still have a few loafs that are a year old and it tastes the same as when it was put in the freezer. I used this recipe which is in "Our Best Bites" one of my favorite cookbooks and it outstanding http://ourbestbites.com/. The recipe is for grilling but I baked them @ 350 for about 30 minutes or until zucchine is tender when tested with a fork.  Went to the garden and picked two for this recipe.
